Pasta Montana

Located in Great Falls Montana, Pasta Montana exclusively supplies the most demanding restaurants and exports to the extremely demanding Japanese retail pasta market. Only the finest ingredients are selected, using custom-built equipment designed for slow, cool forming.

Ma's Pasta is America's great artisanal pastificio located in Austin, Texas. Formed initially by legendary Pastaio Calogero Campo. Directed by master Pastaios and produced in small batches from the finest durum semolina grown on Montana family farms.

At SkyPasta, we test pasta quality using a three-tiered approach:

1.     Consistent, perfect shape – a shell should look like a shell, lengths should be even, and pasta should be well formed and consistent.  

2.     Firm al dente texture -  We go to extreme lengths to insure your pasta has the texture you deserve.

3.     Nutty wheat flavor – the highest level of pasta quality delivers the beautiful nutty wheat flavor of the original durum wheat.  This requires fresh semolina and the kind of slow, cool, forming that most large producers can not accommodate.  

At SkyPasta, we have found that few pasta products achieve all three levels of quality.  Most that do are considered “artisanal” and sell for well over $6 per pound.  At SkyPasta, all of our pasta products are made by master pasta makers (called Pastaio in Italian) and achieve all three artisanal pasta levels – at a price the average person can afford
